Harvested in early February, the wine undergoes cold fermentation and is kept on the lees for a month, enhancing its complexity. On the nose, you'll find elegant aromas of guava and gooseberry, which carry through to the palate. The result is a well-balanced, crisp, and dry finish, perfect for those who appreciate refined, fruit-forward wines.

Reserve Shiraz Viognier
This wine represents a thoughtful blend of Shiraz with 5% Viognier, made in a region known for its ideal grape-growing conditions. The grapes are hand-harvested and co-fermented, with the Shiraz benefiting from contact with Viognier skins. The wine ages for 6 months in a mix of French (70%) and American (30%) oak. The result is a full-bodied wine featuring blackcurrant and spice notes, with elegant character from the Viognier and well-balanced tannins and acidity.

This Pinotage is crafted from hand-harvested grapes grown in Western Cape's favorable terroir. The wine undergoes temperature-controlled fermentation at 25°C, followed by malolactic fermentation and 3 months of aging with French medium plus fire-toasted oak. The result is a wine showcasing blueberry and blackcurrant aromas with subtle smoky notes and a spicy finish.

Cabernet Sauvignon
This Cabernet Sauvignon is crafted from hand-harvested grapes picked between mid-March and mid-April. The wine undergoes stainless steel fermentation with regular aeration and pump-overs, followed by malolactic fermentation. Rather than barrel aging, it's matured with fire-toasted French oak staves for 5 months with two aerations during aging. The result is a full-bodied wine featuring blackcurrant aromas and juicy plum flavors, making it a food-friendly choice.

Hand-selected from three sea-facing vineyard parcels, this wine boasts a distinct mineral edge, influenced by fresh ocean breezes and decomposed granite soils. A blend of 96% Sauvignon Blanc and 4% Sémillon, it is aged for 16 months on fermentation lees in old French oak, enhancing its texture and complexity. Best enjoyed moderately chilled, this wine offers a refined balance of freshness and depth.

The 2023 Isliedh is a captivating blend of Cape coastal Sauvignon Blanc and richly textured Sémillon, creating a wine of exceptional complexity. Hand-selected from two vineyard parcels on a sea-facing mountain slope, where harsh winds and rocky, decomposed granite soils concentrate the flavors, the result is a beautifully balanced wine. Comprising 66% Sauvignon Blanc, 27% Sémillon, and 7% Sauvignon Gris, Isliedh offers layered elegance and is best enjoyed moderately chilled between 10°C – 14°C.

This 100% Sauvignon Blanc from Darling Cellars boasts a refreshing bouquet of green fig, asparagus, and freshly cut grass, leading to a tropical fruit palate of melon, passionfruit, and pineapple. The vibrant acidity keeps the wine lively and balanced, perfect for pairing with seafood, particularly West Coast mussels or oysters. Grown in dryland vineyards on South-West facing slopes with no irrigation, the grapes thrive in the cool breezes from the Atlantic Ocean. Handled reductively to preserve freshness, this wine matures on the lees for two months, resulting in a complex, fruit-driven expression of the Darling terroir.

This 100% Chenin Blanc from Darling Cellars offers a bouquet of ripe yellow peaches, quince, guava, and white pear, with a well-balanced, elegant structure. The palate is filled with tropical fruit flavors, complemented by a fresh, crisp acidity and a lingering aftertaste. Harvested from dryland bush vines just 15 km from the Atlantic Ocean, the grapes thrive in laterite soils, ripening naturally. After 14 days of fermentation, the wine is left on the lees for 3 months to develop complexity. Perfectly suited for rich seafood dishes or lightly spiced chicken salads.

Chocoholic Pinotage delights with aromas of Turkish delight, chocolate, cherries, vanilla, and red plum, leading to a palate enhanced by butterscotch and smooth, supple tannins. This 100% Pinotage is perfectly balanced, offering both structure and length of flavor. Grown on dryland bush vines in the granite-rich soils of the Darling Hills, the grapes benefit from the cooling Atlantic breeze. A portion of the wine is aged on staves for added complexity, while 10% of the juice is made from raisened fruit, delivering a smooth, subtly sweet, and irresistibly indulgent experience. Ideal on its own or paired with meats, pastas, or chocolate desserts.

Black Granite Vintage Reserve is a full-bodied blend of Shiraz, Cinsaut, Grenache, and Mourvedre, offering a luxurious, smooth texture with velvety tannins and bold flavors. This meticulously crafted wine delivers a sumptuous mouthfeel that lingers, embodying refined indulgence. The grapes are grown on dry-land bush vines in the rich, dark granite soils of the Darling region, benefiting from warm days and cool Atlantic evenings. Aged for 8-10 months in French and American oak, it pairs beautifully with darkly braised lamb, duck breast, oxtail potjie, venison pie, and spicy dishes.
